How to Make Pineapple Vinegar

Ingredients

  • ½ c brown sugar
  • 1 ltr chlorine-free water
  • peel of 1 organic pineapple (cut into small chunks)
  • mother of vinegar

 In a stainless steel pot or wide-mouthed class jar, dissolve brown sugar into the water. Add in the pineapple peel and stir. Cover with a cloth and tie it or put a rubber band around it to keep the bugs out. Put it away in a dark, cool place. Wait a week until the liquid darkens. Strain out the chunks of peel. Add in the mother of vinegar to the liquid and put it away in a dark, cool place for 2-3 weeks. Taste and see if it’s strong enough to your liking. If not, wait another week or so.

To get a mother of vinegar, you may ask a friend for one or you may be able to buy one. It looks like an opaque, gelatinous pancake.

Note: The peel that has been strained out can be used to make EM (Efficient Microorganisms), which is useful for rinsing grease off of dishes, watering plants, cleaning bathroom floors, etc.
